Tôm rửa sạch, để ráo và chỉ cắt phần râu. Xốc với 30g muối, để thấm trong 15 phút.
Đem tôm đi nướng ở 150 độ C trong khoảng 30 phút. Sau đó mở lò, đảo đều và cho tỏi vào.
Nướng tiếp ở 120 độ C trong 30-40 phút. Tuỳ nhiệt độ lò nhà bạn, tốt nhất nên kiểm tra thường xuyên để tôm khô từ vỏ đến thịt, không còn nước gạch tôm nữa.
Lấy ra để nguội, bỏ tỏi đi rồi cho vào máy xay với đường phèn. Xay nhuyễn và rây cho bột mịn rơi ra. Phần tôm thô chưa nhuyễn tiếp tục xay và lấy ra rây tiếp, cho đến khi hết phần thô.
